"Venus Bay Prawn and Rocket Salad with Lime dressing"
INGREDIENTS: Serves 2
16 pieces prawns (peeled)
3 handful rockets
6 cherry tomatoes( cut into halves)
1 handful purple cabbage
1 handful pomegranates
a quarter of apple (sliced)
1/4 tsp. paprika
salt and pepper
1 scallion (chopped)
For Dressing:
juice of 1 lime
1/2 tsp. lime powder
1/2 tsp. sugar
1 tbsp. olive oil
1 clove garlic minced
salt and pepper to taste
Instructions:
1.) Sprinkle paprika in the prawns to both sides. Heat olive oil in the pan, add prawns cook for one minute each side. Remove and set aside .
2 Mix all the dressing in a small bowl.
3. Combine rockets, pomegranates, tomatoes, cabbage ,apple and spring onion into a large bowl . Asseble it in the plate then add prawns . Drizzle with lime dressing .
